Gin & Tonic Chocolate Truffles

Celebrate International Gin & Tonic day with these beautiful G&T Chocolate Truffles.

If you're a fan of Gin, or know somebody who is, these tasty chocolate truffles make a wonderful self-indulgent treat or home-made gift ready for the festive season ahead.

Makes 24 approx. truffles

Ingredients:

400g Dark Chocolate

500g White Chocolate ( I double dipped mine for extra coverage)

200ml Double Cream 

50ml Tonic

50ml Gin

Lime (zest and juice)

Method:

  1. Melt the dark chocolate in a bowl over a pan of simmering water - ensure the bowl is not touching the water as this can burn the chocolate.
  2. Remove from the heat and stir in the double cream, gin, tonic and lime juice and zest.
  3. Place them back into the fridge, uncovered for 2 hours, or overnight.
  4. Remove from the fridge once firm, and using clean hands, form into small, walnut-sized balls, Place them back onto the baking paper and pop into the fridge for 2 hours, or freezer for 1 hour.
  5. Prepare the white chocolate by melting it in a bowl over a pan of simmering water.
  6. Remove the truffles from the fridge or freezer and dip to coat in the white chocolate, tapping off any excess.
  7. Allow the chocolate to set before serving. Truffles should be served at room termperature.

Recipe Notes:

If you're not a particular fan of tonic you can substitute this part of the recipe for your mixer of choice - at home I swapped it out for Rose Lemonade and left out the Lime zest and juice and they were still just as delicious.
