Easter Chocolate Parfaits

For the ultimate chocolate indulgence this Easter, why not give these Easter Chocolate Parfaits a try?

Made with double cream, melted chocolate, candied mini eggs and chocolate fudge brownies, this is an easy recipe to make with the kids over the holidays and will use up some of those excess Easter gifts.

Easter Chocolate Parfaits - Serves: 4

Ingredients:

160g Candy Coated Mini Eggs

500ml Double Cream 

100g Milk Chocolate (we used broken Easter eggs - but you could also use our Milk Chocolate Buttons)

Chocolate Fudge Brownie Bites (we cheated and bought some of the ready-made brownie bites from our local supermarket but if you have the time you could always make your own!)

Method: 

  1. Tip the mini eggs into a food bag and crush with a rolling pin.

  2. Melt the chocolate using a bain marie, or in a microwave using 10-20 second bursts.

  3. In a seperate bowl, whip the cream until it starts to thicken and then remove about a third of the whipped cream into a second bowl and save for later. Gently fold the melted chocolate into the rest of the cream until mixed.

  4. Using small drinking or dessert glasses, start layering the parafits by popping a couple of the brownie bites into the base along with some of the crushed mini eggs. Top with a layer of chocolate whipped cream and repeat the process until the glasses are full.

  5. To finish the parfaits, top each glass with some of the plain whipped cream and some more mini eggs.
