Chocolate Chip Banana Bread
written by Claire James
Banana Bread has become a lockdown staple for many of you.
Love it or hate it, we've found a chocolatey twist to this tried and tested recipe, and my kids absolutely loved it. Even my 9 year old daughter, who turns her nose up at everything before she's even tried it came back asking for more.
In fact, it was such a hit that it only lasted for a few hours and I've already been asked to make some more!
Makes: 6 slices
Ingredients:
- 3 ripe bananas
- 75g melted butter
- 100g sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- A pinch of salt
- 185g self-raising flour
- 85g milk chocolate buttons
Method:
- Preheat oven to 180˚C (Gas Mark 4).
- In a bowl, add the bananas and mash until smooth. Add in the melted butter and stir until well combined.
- Add the sugar, egg, vanilla, baking soda, salt, and flour, and stir until the batter is smooth.
- Add in the chocolate buttons and pour the batter into a greased loaf pan. Top with additional chocolate buttons.
- Bake for 50 minutes to an hour, or until a skewer comes out clean.
- Cool completely before serving.
