Chocolate Chip Banana Bread

written by Claire James

Banana Bread has become a lockdown staple for many of you.

Love it or hate it, we've found a chocolatey twist to this tried and tested recipe, and my kids absolutely loved it. Even my 9 year old daughter, who turns her nose up at everything before she's even tried it came back asking for more.

In fact, it was such a hit that it only lasted for a few hours and I've already been asked to make some more!

Makes: 6 slices

Ingredients:

  • 3 ripe bananas

  • 75g melted butter

  • 100g sugar

  • 1 egg, beaten

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking powder

  • A pinch of salt

  • 185g self-raising flour

  • 85g milk chocolate buttons

Method:

  1. Preheat oven to 180˚C (Gas Mark 4).

  2. In a bowl, add the bananas and mash until smooth. Add in the melted butter and stir until well combined.

  3. Add the sugar, egg, vanilla, baking soda, salt, and flour, and stir until the batter is smooth.

  4. Add in the chocolate buttons and pour the batter into a greased loaf pan. Top with additional chocolate buttons.

  5. Bake for 50 minutes to an hour, or until a skewer comes out clean.

  6. Cool completely before serving.
