Halloween Cheesecake Brownies

For the ultimate Halloween treat, why not have a go at making our delicious cheesecake brownies? This is an easy recipe with a fudgy and indulgent result, and is a perfect way to keep busy with the kids over the October half term.

We made 6 large brownies, but this is a very decadent brownie - so you can comfortably make 9-12 using this recipe!

Halloween Cheesecake Brownies

Ingredients:

Brownie Mix:

170g Unsalted Butter

300g Granulated White Sugar

1/2 tsp Salt

3 Medium Eggs

100g Plain Flour

56g Cocoa Powder

140g Milk Chocolate Chips

Cheesecake Mix:

300g Soft Cheese

55g Granulated White Sugar

1 Egg

1tbsp Yellow Food Colouring

1/2 tbsp Red Food Colouring

For Decoration:

Halloween Chocolate Shapes

10g Milk Chocolate Chips

Method: 

1. Preheat your oven to 195 degrees C, 175 degrees fan, or gas mark 5.

2. Start first with your brownie mix! Gently melt your butter in the microwave, and mix into the granulated sugar and salt.

3. Make sure your mixture isn't too hot, before mixing in your eggs.

4. Mix in your (sieved!) flour and cocoa powder until fully combined, followed by your chocolate chips.

5. In a separate bowl, get started on your cheesecake mix. Beat your soft cheese with the sugar until creamy. Whisk in your egg and your food colouring. If you don't get your desired shade of orange, you can add more of the appropriate food colouring in small increments until you get there!

6. Line a 7" square tin (or whatever you have!) with parchment paper. Add in the majority of your brownie mix, and leave a small amount to the side for decoration - you only need about a tablespoon!

8. Add the cheesecake layer on top of the brownie mix - don't put it all the way to the edges, as this can burn!

9. Add a small splash of water to your remaining brownie mix to thin it out, and add small blobs onto the cheesecake mixture. Use a knife or skewer to drag the brownie mix around, creating a marbled effect on top of the brownies.

10. Bake for approximately 45 minutes, or until the cheesecake layer doesn't jiggle.

11. Wait for the brownies to cool. When cool, melt your remaining chocolate chips in the microwave - this won't take long. Use your melted chocolate as a 'glue' to stick on your Halloween Chocolate Shapes.

12. Now, you can cut your brownies into however many pieces you desire - and enjoy!
